Here is what I believe: We should enjoy life.

Life is about love and passion and the pursuit of excellence.

Family first. Professional excellence second. My profession is cooking and I do it with passion. I love Italian food because it is simple, it is seasonal, and it is life.

In culinary circles, French food, fusion, different ethnic cuisines come and grab the spotlight. They are different for the masses and the media and they are interesting. But Italian cuisine is the masterpiece. In the same way that a ballerina, or a soccer player, or a racehorse, or an opera diva excels effortlessly – so does the Italian style of cooking.

Great ingredients, right for the season, skillfully prepared – this is Italian cuisine. There is the semblance of effortlessness to Italian cooking. This is the excellence of it.

Seasonality is key to Italian cooking, as it is in life. People refer to “spring” as the adolescent age, but I have been through many springs in my life and many winters – and as we pass through these seasons, we have different wants, different needs, and different abilities. Italian cooking captures this – giving us the food that is right for us at that moment.

I started a blog to share the philosophy that guides me more than the recipes I make. Along the way we’ll do some cooking.

Pantry
I will show you how to stock your pantry so that you can make a delicious and healthful meal for your family as you unwind from your day. A well-stocked pantry means your meals will come together quickly – so you’ll have dinner on the table before the kids break out the cereal. Once a month you’ll stock your pantry.

Produce
I will show you how to select fresh seasonal produce and how to prepare it. Maybe you grow produce in your garden, or herbs on your windowsill. Whether you buy your produce at farm stands, green markets, or in the supermarket, I’ll show you how to choose quality produce that will make your meals delicious.

Preparation
By choosing fresh, quality produce, your meals will be healthy and delicious. Excellent produce requires less preparation in the kitchen. Excellent produce tastes delicious, so you’ll eat more of the foods that are good for you.
